Even though I worked like a dog on Christmas presents, I failed, but it gives me a good start on 2022 gifts.
Our Christmas party was pretty good. For a high end place, the food was not great. I certainly could of done better. It was a meal I did not have to cook and I didn’t need to make supper that night. I enjoyed conversation with one of my work mates.
Two days after that another workmate came down with COVID-19. Guess who sat very close to him in the ride over to the park? Yup, you guessed right. I only found out about it yesterday. So far so good though my throat was scratchy yesterday and I had a bit of headache. I know it isn’t COVID as I am fine today. It is all weather related.
Very quiet Christmas Day, though my DIL did make a good turkey dinner. That surprised me. Mostly we just talked and enjoyed each other’s company.
The 27th was at my house. I did up appetizers, made a big mess of ribs....so many, I had to farm them out to other ovens in the building. I made potato salad, daughter made her pomegranate salad and DIL brought more appetizers. There were 11 of us. We were allowed 10 in addition to my household. Worked great. Had a blast plying Dutch Blitz.
28th I did nothing. 29th I thought through what I can do with leftovers. I ate the potato salad and ribs. That still left me with a whack of food. It has all been decided on.
We had a large platter of fruit. It is now being dehydrated. Items are pineapple, cantaloupe and green melon. The water melon, I will add to the smoothie sack in the freezer. DIL brought spinach dip and black bread over. The black bread will be made into croutons. The spinach dip is now in ice cube trays in the freezer. Once they are frozen they will be packaged up and used as sauce over pasta, in wraps and maybe added to soup for a different flavour. The chilli cheese dip will be made into chilli Mac and cheese, I will put some into puff pastry cups I have. If there is any left I will use it in a spicy soup.
Winter thoughts
We have now finished the first week of winter (solstice). The week was warm. It was beautiful out walking and nice driving for get togethers. Then on the 26th all madness started. We had a bit of a blizzard culminating in 15 inches of snow. We were able as stated above to get together, but it was short and sweet as the roads were horrible and everyone wanted to be home before dark.
Starting the second week of winter. The 28th started the downward spiral into very cold temperatures. Dexter and I have not been out for two days. Thankful for puppy pee pads. Yes, I use them when I deem it too cold for him to be out. Today 30th, my car would not start remotely. I went out started it and let it run for 1/2 hour. We have having lows of -35 or so with the windchill making it feel like -44C. -40 degrees is the same in Celsius and Fahrenheit just to give you an idea. End of week it is to get a wee bit warmer.
